The Best Ever Gluten Free Granola


This healthy and delicious gluten free granola is so easy to make and is low in sugar and carbs and high in fibre and good fats, unlike most of the choices you will find in the cereal aisle of the supermarket.

Better still, you can source all of the ingredients from your local wholefoods store, so you can say goodbye to all that wasteful packaging- double win! I mean seriously, the packaging on cereal is so over the top, and why is it always a giant box with a less than half full plastic bag inside (ugh.)

Gluten-free granola ingredients in jars


2 1/2 cups Sunflower Seeds
1 cup Pumpkin Seeds
1 cup shredded coconut
1 cup coconut flakes
1 cup Almond Meal
1/2 cup Linseed Meal
1/4 cup raw Macadamias chopped
Pinch of sea salt
1/2 cup slivered Almonds
1/4 cup cold pressed Macadamia Oil
2 tbsb Honey
1/4 cup Banana chips
1/4 cup dried cranberries
8 dried apricots chopped


Preheat oven to 160 degrees

Combine first 8 ingredients in an oven proof enamel baking dish. Drizzle honey and macadamia oil over and bake in oven for 30 minutes, turning every 10 minutes or so and keeping an eye out that it doesn't get too dark.

Once the granola is evenly toasted and the coconut flakes are a light golden brown add banana chips, cranberries and apricots to the granola and stir through. Return to the oven for another 5 minutes. This is really important, as if the dried fruit is baked too long it burns very easily.

Once granola is cold, store in an airtight container, preferably a glass jar to keep it nice and crunchy. Serve with fresh fruit, home made almond milk and greek yoghurt... or just scoff straight from the jar as a yummy snack!
